Chili Cook-off Time!

So, my company held their 2nd annual Chili Cookoff today. I won 3rd place last year, so I figured out where I went wrong and made it better, bolder, and hotter! If yall know anything about Texas, we love our chili hot! Well, I didn't turn mine into a 4 alarm fire, but it has a nice lingering heat that comes on after tasting.

Ingredient list
Can of Ranch style chili beans
1 Large Sweet Onion
1 1/2 bulbs of fresh garlic
1 habanero pepper
1/2 cup grilled New Mexico Green Chilis (diced)
1 lb lean, grass fed beef stew meat
1 lb lean, grass fed pork sausage
1 lb Sage pork sausage
2 cans of diced tomatoes
Bacon grease for sauteing the onions, peppers, and garlic
4 different types of chili powder
Salt to taste
1/2 tsp cumin

Cook for 7 hrs on low.... and then serve... Yummy!

I found out that I won 1st place! It was by 8 votes. I am ecstatic as I have NEVER won a chili cook-off before. Last year was the first time I had even placed. Next year, I will be going for Win #2! I even had enough left over for 2 bowls.

our recipe is as follows (keep in mind we live in perth western australia)
2 cans of tomatoes
2kg of mince, can half and half with sausage if you prefer
2 cans of chilli beans
1 habanero
2 types of mexican chilli powder
2 onions 3 garlic
tomato sauce
whole tomatoes
beef stock
a smidge of cornflour
now for the spices.....
cumin,paprika,coriander cayenne
Salt to taste

Great recipe Gogo. Reminds me I have to do chili one of these days. Problem is just to get all of the ingredients together first.
